The soft surface allows you to create delicate pieces of work when making flowers with fondant or gum paste, whether it be petals or frill work. It provides the ultimate surface to place pressure and rub back and forward using assorted tools without breaking through the fondant or gum paste. Cupping and thin, delicate edges cannot be easily achieved on a hard surface.
